Forgot how easy it is to make homemade soup... plus get to use up all the veg in the fridge 💪🏼. This picture shows veg soup but at the end I decided to blend it. Using the ingredients below I would recommend letting it stay THIC. GF & V Ingredients: -Red pepper -Butternut squash -Green onion -Celery -Bok choy -Carrot -Green beans -Cauliflower -Yam -Onion -Garlic -Rice (optional) -Parsley -Turmeric -Chilli flakes -Salt & pepper -Vegetable broth Directions: -Put 2 tbsp of oil at the bottom of your pot and let a 1/2 chopped onion & a clove of garlic soften for 2-3 minutes -Add 8 cups of vegetable broth -Add all cut up vegetables -Add seasoning -Let sit on medium for as long as you can (2-3 hours) Optional: add 1 cup of rice
