Trying to make good choices when it comes to desserts on Thanksgiving is HARD! This is one of the reasons I love to volunteer to bring dessert if I am a guest at someone’s house for the holiday. This way, I can bring something that is delicious but also, maybe just a touch healthier than the “standard” version. So far, this recipe for Grain Free Pumpkin Pie is a favorite and always a big hit! (Gratefully shared from #VTLOZPATDT6JBmLX.99) Ingredients for crust : * 2 cups blanched almond flour * 2 T coconut oil (melted) * 1 flax egg (I used a flax egg replacement and it worked great) * 1/4 tsp sea salt For the filling: * 2 cups pumpkin puree (fresh or canned is fine) * 3/4 cup almond milk * 1 1/2 tsp cinnamon * 1 tsp vanilla extract * 1/4 tsp nutmeg * 1/4 tsp ginger * 1/4 tsp cloves * 1/2 cup maple syrup * 3 T arrowroot powder * 1/2 tsp salt For the crust 1. Preheat oven to 350. 2. In a food processor, mix the flour and salt. Then add in the egg and coconut oil and mix until a dough starts to form. 3. Once the dough forms, press it into a greased glass pie dish . I used a 9 inch. Bake it in the oven for about 9-11 minutes. For the filling 1. In a food processor , blend all the filling ingredients until smooth. 2. Pour into baked pie crust and bake in the oven at 350 for about 50-60 minutes. by Melissa King Recipe Notes When mine was done cooling, it still felt slightly loose, so I put it in the fridge and it completely firmed up. That worked out great. I think that arrowroot is just a tad less stable than cornstarch. However, it is free of GMOs and that’s why I used it over cornstarch. “I’ve tried everything.” “I’m going to look like this forever.” “Nothing works.” Sound familiar? I spent years with those thoughts. I tried every fad. I starved myself only to gain back everything plus. But, there isn’t an easy fix. You won’t see changes until you make big changes. It wasn’t until this time last year I went into a deep depression and realized I had to change my life before I didn’t have one anymore. I started just doing cardio, then added Insanity, then finally asked for help with lifting. I dropped weight during the first two, but it wasn’t until I started lifting that I started seeing real changes...physically and mentally. THE PAST IS USELESS TO YOU WHEN CREATING A FUTURE ➰ Well, sort of.... So often we look to our past with the notion of learning from our mistakes. I certainly do, and I believe this is a wise part of growth and learning. However, there is a difference between learning from our past, and continuing to dwell on what we did before to guide and dictate what is possible in our future. ➰ This is HOGWASH. ➰ ‼️What happened in your past was for you to learn certain lessons that will HELP you in your future.Beyond that, forget about it! Do not limit yourself based on your past experiences. ‼️The future is the domain of your imagination. As much as you allow yourself to expand and see the possibilities rather than being limited by past failures, is the measure by which you’ll allow yourself to grow into a new reality. YOU set that standard. Dream big, believe big things are possible for you, and that your past (especially if it was difficult) happened to teach you the lessons you needed to MAKE a better future possible. You are as limitless as you believe yourself to be. ⁉️What will you choose for your life going forward⁉️
Thanksgiving is almost here. Being a short week, so many of us (including me) have trouble focusing on work tasks, when there are menus to plan and shopping to do. Here is another of my favorite recipes for consideration. Sweet potatoes are a healthy, tasty dish to bring into the holiday mix without feeling guilty!
From 3-INGREDIENT SWEET POTATO CASSEROLE WITH MAPLE PECANS INGREDIENTS * Olive oil (for pan) * 5 1/2 pounds sweet potatoes, peeled, cut into 1 1/2" pieces * 2 teaspoons kosher salt, divided, plus more * 1 1/4 cups pure maple syrup, divided * 2 cups pecan halves (about 7 ounces) * 1 1/2 teaspoons freshly ground black pepper, divided PREPARATION * Preheat oven to 350°F. Oil a 3-qt. baking dish. Cook potatoes in a large pot of boiling salted water until very tender, about 12 minutes. Drain; let sit in colander 15 minutes. * Meanwhile, heat 1/2 cup syrup in a large skillet over medium-high. Add pecans, 3/4 tsp. salt, and 1 tsp. pepper and cook, stirring constantly, until syrup has evaporated and pecans are glazed, about 5 minutes. Transfer to a parchment-lined rimmed baking sheet and let cool. * Purée potatoes, 1 1/2 cups water, and remaining 3/4 cup syrup, 1 1/4 tsp. salt, and 1/2 tsp. pepper in a food processor until smooth. Transfer potato mixture to prepared baking dish. * Coarsely chop pecans and sprinkle evenly over potato mixture. * Bake casserole until top is lightly browned, about 40 minutes. Let sit 15 minutes before serving.
